This is exactly what we are intending to do.....offer body panels for weight advantage. We are currently working on fenders, but I can tell you now that there is no way we could offer 100% CF fenders for $300 a set. I want people to realize that the carbon is going to cost. We work hard to keep the price down, but there is only so much we can do.
The cost of true carbon fiber is through the roof and true aircraft carbon fiber is in very limited supply. The major aircraft builders have the lions share of the supply. We have been cutting carbon fiber exterior panels for a major aircraft builder and they are even behind in supplying us their own parts.
CF hood/fenders/trunk for a significant savings in weight would be worth buying. For me personally stick-on CF trim prices are just added weight and worthless junk.
How about a CF roof?

I can't even begin to say how much I'd love to have some CF in my Lucy but they way the economy has gotten I'm forced to choose between more mods and actually getting to go on runs and meets to enjoy the car. I was hoping to use that tax incentive check to get some CF and ended up using it to help pay for the Tail of the Dragon run instead. We've got a member here (SolScuba) who has to sell his highly modified car because he lost his job and simply can't afford to keep it anymore...and he's not the first one to have to do that. Also, I have to wait all winter to be able to get her on the road so I'm not about to go without Lucy during prime driving weather for any mod right now. And yeah, CF is expensive but anything worthwhile is expensive.

I would be willing to buy LOTS of cf. Show or Go. Hood Fenders Trunk are all the main ones I would be looking for. Also some engine parts would be nice to accent under the hood.

I think it comes down to the prices people are willing to pay for performance vs pretty. First off I applaud you for putting out top notch products with quality materials. I often try to find the best things I can afford so I don't end up buying things multiple times. However there is a line where "dress up only" pieces are not worth the cost. I would love to have the steering wheel button overlay and the e-brake pieces in carbon fiber (I don't really link the silver gray in our cars). But, I'm not going to pay $200 to have this part look "nice". Now if there was a CF hood that offered significant weight difference I would be willing to pay much more for the "performance" upgrade. Prices have to be kept pretty low for dress up only parts as most people have a lower spending threshold for this type of part. Performance parts can be more expensive since people feel they are getting a benefit from their cash. At least that's my take on it. Have there been prices posted for the CF engine cover or fuse cover? I would hate to spend a ton of cash on something that gets covered up 99% of the time.

What most people are saying is there are two classes of products. The "dress up" products that will mostly appeal mostly to the folks that do shows etc. The second class are the "performance" products which will appeal to both the groups. Unfortunately, the performance products cost more and will require a larger percentage of people's upgrade budget.
Many people are having problems with their rocker panels getting dented. CF rocker panels covers could be an excellent solution.
