There are several threads on this subject. 210 is in the normal range. At 250 the oil begins to break down but it's not unheard of to see spikes up to 215 or 220 under the right conditions. Look for wide fluctuations as an indicated of problems.
210 if your heat is on, or your A/C is on.... Or your idling for a while in a climate above 80 degrees. Otherwise mine runs 192-198, if I have the heat on, 198-205 and this last summer with the a/c on in 95 degree weather I saw 215.
