Choosing a color is a very personal thing. And a good one is not inexpensive.
First I have to agree, your car when last seen was very good looking.
When I decided to have my car painted, I knew I wanted ref, but a unique red if possible. If I was spending all that money for a custom paint job, I wanted it to be readily apparent to one and all that it was unique. The specific shade is different than all but a very few cars, but with the very high copper flake content, it is unique.
Pick a color that you will be happy with for the long run. Consider metallic, pearl, or candy. The latter two are very difficult to repair should the need arise. Also, candies can be difficult to get right, do if you choose to go that route, make sure the painter has plenty of experience working with the same paint system.
Do not try to cut corners. A color change means disassembling the body. On my car, everything but for the glued on quarter panels came off. All panels were prepped and painted on all surfaces
But, the end result can be amazing!
